That’s pretty much a wrap for 2023! It has been a year of new adventures, chaotic classrooms and lots of baking (somethings will never change).
To celebrate the end of another school year and say “adios” to my students, I decided this year to make them a little farewell gift. Gingerbread cookies made the most sense, seeing as we’d well and truly entered into the festive season. I settled for this recipe by BBC GoodFood, it wasn’t too heavy on the ginger and super easy to make! Of course, to make it more fun I topped them with popping candy, sprinkles and smarties!
With the leftover gingerbread, I took a more simpler stance. Handing them over to my niece to decorate, we kept decorating somewhat minimal and focused more on the spiced deliciousness of the biscuit itself. These were placed alongside shortbread (this recipe of course!) and meringues ready to be gobbled up on Christmas morning.
