When my sister asked me if I’d make her wedding cake earlier this year, I was honoured but understandably nervous. This would be the biggest and most important cake that I’d ever made! Being given creative license meant that I could do whatever I wanted, which naturally led to a rabbit hole of Pinterest searches!
With time, I hatched a plan for the cake that would be both eye-catching and delicious! Knowing that I wouldn’t have time to make a practise cake, I settled on mud cakes for each tier. After copious amounts of butter, sugar and eggs, I had a three tier wedding cake! I managed to successfully arrange fresh flowers and most importantly, make a cake my sister and her husband, as well as their guests loved!
Now, for the flavour details. For the bottom tier, I used Fig & Salt’s chocolate mud cake, filled with a homemade mixed berry jam. The middle tier was adapted from Katherine Sabbath’s caramel mud cake, which sandwiched a not-too-sweet strawberry jam. The top tier, which was the biggest crowd pleaser was a white chocolate mud cake with Beatrix Bakes’ passionfruit curd.
I’m not sure if I’ll ever make anything so extravagant again, but it’s pretty cool to think that I was able to give my sister the such a delicious wedding gift!
